S'mores Brownies - Jack Guthrie and Jeremy Campbell


S'mores Brownies - ****
 

Ingredients:


1 cup butter or margarine, melted
1/2 cup cocoa
4 eggs
2 cups sugar
1 tsp. vanilla
1 tsp. cinnamon
1/2 t. salt
1/2 tsp. baking powder
2 cups flour
3/4 cup chopped pecans (I left these out)
1 cup mini marshmallows (I used 2 cups)
1 cup chopped peanut butter cups (I used 2 cups)


Process:


In a bowl, whisk butter and cocoa together. Add eggs one at a time, whisking between each. Add sugar, vanilla, cinnamon, salt, baking powder and flour. Pour into Dutch Oven sprayed with non-stick spray containing flour (I just coated mine with vegetable oil and didn't have any problems, you could also line your oven with foil). Sprinkle pecans over the top. bake at 400 degrees using 18 coals on the bottom and 12 on the top. Bake 12 minutes and then remove heat from the bottom, but continue baking with top heat 15-20 minutes longer. Remove lid and sprinkle with marshmallows and peanut butter cups. Replace lid and remove all coals. Let sit 5-10 minutes before serving. Makes 12 servings.

*Hint: Closer to 20 minutes for the second part, especially if coals have lost a lot of heat.

Coming into our Dutch oven assignment, we felt very 

confident in the recipe we had, and felt we would be able to execute it very well. We divided up the list evenly, and met at the school the next day, eager to create a masterpiece. We suffered a scare quite early on, as we had trouble just getting a basic fire going. However once we got past that stage, we were able to get things running smoother. We had one of us mixing together ingredients while the other heated up the coals. Once all 30 coals were prepped, we began baking. The baking is very nerve-wracking, as you can’t see what’s happening to your food, so when you take off the lid, it’s a mystery. Thankfully, ours turned out great! Due to our delayed start, we were forced to go into for lunch baking, but we weren’t to upset about it, as we, along with the others who stayed with us were able to have some more. It seemed everyone was very impressed with what we had created, including ourselves. It served as a great dessert after our lunches! This is a great recipe, and as long as you know how to start a fire, I would highly recommend it for anyone looking for a tasty Dutch oven treat!
