Peanut Butter and Banana Graham Crackers

Ingredients:

3 ripe bananas

1/2 cup creamy peanut butter

2 1/2 cups graham cracker crumbs

1 cup ground peanuts

1/2 teaspoon cinnamon


Directions:

1 In a large bowl, mash bananas; cream in peanut butter.

2 Add graham cracker crumbs, peanuts and cinnamon, mixing until well blended.

3 Form dough into a ball.

4 Place on a large sheet of waxed paper and shape into a long rectangle.

5 Wrap waxed paper tightly around the dough and chill 4 to 6 hours or overnight.

6 With a serrated knife, slice dough into 1/4” slices.

7 Place on regular sheets; dry at 145º for 4 to 6 hours or until firm (these will be

softer than other crackers, more like cookies).

8 Makes approximately 50 crackers.

If we were to change the recipe we would probably try adding chocolate to it, but otherwise we both really liked it. If someone were to make this recipe we recommend to make sure to slice the dough very thinly before putting it in the dehydrator, because if you make them to thick it takes a lot longer to dehydrate. I think it's a perfect snack if someone was hiking trip or any other trip. It give you a lot of protein to give you energy throughout the day and to keep you full. This is a great healthy snack with the peanut butter, peanuts, banana and cinnamon. I would make this at home so I could bring this for a snack for sporting events.

"These were yummy! They are even better if you use chocolate grahm crackers! I am very impatient, so I put the dough in the freezer for about 2 hrs, then sliced them."

"Not bad. Was kind of like a protein bar. My mixture didn't set up as much as I would have liked, even in the fridge overnight, so they didn't turn out very pretty. Perhaps putting it in the freezer for 30 minutes would have helped. Thank you for posting such a unique recipe."
