Bannock on a Stick

Bannock on a Stick
By: Josh Day & Zach St.Amour

Ingredients

  • Makes 5-6 large stick-bannocks
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 2 tablespoons baking powder
  • 1/4 cup butter, melted
  • 1 1/4 cups water

Mixing

Mix all of the ingredients together.  Add approximately 1 cup of water first and slowly add the remainder until it is just firm enough to form on a stick.  The bannock batter can be less firm if cooking in a frying pan.

Cooking

Stick Method – Spoon up a mid-sized handful of batter. Use lots of flour to keep from sticking to hands while patting it flat and shaping it onto stick. Make sure the edges are well incorporated into each other, or they will separate while baking.  Cook 7-10 min over coals until golden brown. Rotate continually to encourage even baking and prevent burning.

What to Improve Upon

I thought that this recipe went really well, I think this because it was really easy to do, tasted great, and it took very little time from mixing the ingredients to eating the finished bannock. Next time, I would bring more topping for it such as different jams and something a bit more sugary just to try them out and see how it tastes.

Cinnamon Maple Bannock

By: Anna Streib and Sydney Switzer

Ingredients
3 cups flour
1 tbsp baking powder
1/2 tsp salt
1/4 cup shortening or lard, cubed
3/4 - 1 cup water

Instructions
1: Mix all of the dry ingredients
2: Cut shortening or lard (can be replaced with butter) into the mixture (STOP HERE IF THE BATTER IS NOT BEING USED RIGHT AWAY)
3: Gradually add water and mix the dough
4: Mix dough until you can handle the dough without it being too sticky
5: Take as much dough as desired, and spread it evenly, and somewhat thinly around a stick about the width of a hot dog.
6: Cook the dough over hot coals for about 10-15 minutes, or until it becomes brown on the outside, and removes easily from the stick.

This bannock recipe ended up being a great success. We followed the exact steps, and prepared the mixture beforehand, at home. We also added 2 teaspoons of cinnamon, as well as a half teaspoon of nutmeg, to the dry mixture, to give the dough some flavor. At school, we gradually added water until our dough was a good consistency, then we separated the dough into 4 even pieces, so this way we had extras in case some didn't turn out. We wrapped the pieces around the sticks, and cooked it over hot coals for about 10-15 minutes. Once they were done cooking, we ate it served with butter and maple syrup, and even though our first batch turned out perfectly, we still made a second batch and ate it all. If given the chance to make bannock on a stick again, we would not have changed anything since we were very satisfied with our final product, although we would really like to try making various other flavors, such as a pizza bannock.

Bannock on a stick

Recipe:
- 2 ½ cups all-purpose flour
- 2 tsp. baking powder
- ½ tsp. salt
- ½ tsp. sugar
- 3 Tbsp. lard, bacon grease or canola oil
- 1 cup cold water

How we prepared it:
- It advance we mixed all the dry ingredients in a bowl
- At school we mixed in the oil and water
- We found a fire box. Started a fire and got dry wood to burn. We found branches to cook our bannock on  [ reasonable size not thin but not to big]
- wrapped the dough around the stick and let in cook over coals.

Since the coals from the previous fire were almost out we decided to make another one, since most people were already sharing one fire and there was no space. We went out and collected wood and started a fire near the small stream . The boys [TJ and Ty ]help us maintain our fire as we were cooking the bannock. Our recipe was well done considering that the consistency was perfect comparing to other groups with their dough  seemed to be dripped of of their stick. It requires patients. In the end mine tasted great and was perfectly brown ,since I had waited for the wood to burn out so i could use the coals to cook the bread rather than letting the fire burn it. With some butter the bread tasted great. The only thing I would do next time is to heat the stick before we put the dough on. Heating the stick which will allow the bread to cook from the inside out and come out perfectly.
